VEGGIE GNOCCHI
Ingredients:
Broccoli
Zucchini
Spinach
Mushrooms
Gnocchi
Minced garlic or 1 clove fresh garlic (minced)
Approx. 1 cup of cream
The juice from half a lemon or a dash of lemon juice
Change it up with different veg depending on what you need to use up.
Recipe:
Boil the gnocchi, instructions are always on the packet but generally when the gnocchi start to rise they are done. Strain.
In a frypan, pour in a drizzle of olive oil, minced garlic, and any of the veg you are including. Once the veg is stirred/cooked through, pop the gnocchi into the pan with the veg.
Stir through for a min or 2. Pour in the cream and lemon juice with everything else and mix through. Let it simmer for a while and get all creamy. Serve with a crack of pepper if you desire!
