I got this recipe from the ‘Koori Cook Off’ Informaiton workshop I attended while on placement in 2018. (https://www.heartfoundation.org.au/your-heart/aboriginal-health/cooking-and-eating-good-tucker/the-koori-cook-off).

Ingredients: - Diced onion - 2 gloves garlic, crushed - 1 teaspoon ground turmeric - 1 teaspoon ground cumin - 400g canned chickpeas - 400g canned lentils - ½ cup sunflower seeds - ¼ bunch coriander - 2 eggs, lightly beaten - 2/3 cup wholemeal flour


Add diced onions to a non-stick fry pan. Cook until softened. Add garlic, turmeric and cumin & cook further 2-3 mins while stirring. Place into a food processor, leave to cool. Add chickpeas, lentils, sunflower seeds, coriander, eggs and pepper into the food processor. Blend until smooth.

Transfer mix into a bowl, add flour, combine and form into 8 patties.

Fry pan on medium heat, spray fry pan with olive oil and fry patties on both sides till golden.
