SCRAMBLED EGGS w TOAST & BROCCOLI

Ingredients:

- 2-3 eggs

- Light cooking cream - approx. 2 tbsp/a dash

- Extra virgin olive oil

- 1 piece of wholegrain bread

- 1/2-1 cup brocolli

- Sprinkle of fetta


Recipe:

Whisk 2-3 eggs in a bowl, add a dash of light cooking cream, whisk further.


Toast the bread.


Cut the brocolli up until small pieces. Steam brocolli in microwave (to steam in microwave, place the cut up brocolli in a microwave safe bowl, add a splash of tap water, and then put in microwave for 3 minutes - then drain).


Heat a frypan with dash of extra virgin olive oil. Place the whisked eggs/cream in the fry pan and constantly stir to create a scramble.


When scrambled, place on top of toast on plate with a crack of pepper and any herbs/spices desired. Place the brocolli on plate and sprinkle with feta (and if you're weird like me, stir through some anchovies).
