SANG CHOY BOW


Ingredients:

- 2tsp peanut oil - 1 tsp sambal oelek - 500g pork mince - 1 clove garlic crushed (or minced) - 1 can water chestnuts chopped - Juice of 1 lime - 1 red capsicum chopped - 1 celery stalk chopped - Spring onion sliced thinly - 2 tbsp’s soy sauce - 2 tbsp’s rice vinegar - 1 Iceberg lettuce - 1 packet crunchy fried noodles

Recipe:

Heat oil in pan, stir-fry pork mince & garlic for 5 mins. Add water chestnuts, sambal oelek, 1/2 a limes juice, capsicum, celery, soy sauce & rice vinegar. Stir until veggies are tender. Remove from heat and stir in the crunchy noodles. Divide out into lettuce leaves and sprinkle with spring onion & lime juice. 😋
