- 1/4 butternut pumpkin

- 3 white potatoes

- 2 carrots

- 4 tbsp's light sour cream

- Pepper


1. Cut up the white potatoes and butternut pumpkin into similar sized pieces. Cut up carrots into small pieces

2. Place all together in a large pot and fill with water and bring to the boil over the stove

3. Drain and place into a large bowl. Mash together (preferably with a handheld mixer, but it’s possible to do with just a fork)

4. Place the sour cream and cracked pepper in the bowl and stir to combine until smooth

5. Enjoy as a side to any dish.
