BAKED FISH w VEG & RICE

Ingredients:

- Fish (I used the frozen Basa fillets from ALDI)

- Extra virgin olive oil

- Parsley/oregano

- Brown rice

- Spring onion

- Crunchy Asian noodles

- Brocollini

- Lemon (to squeeze on top)


Recipe:

Pre-heat oven to 180 degrees. Defrost the fish and place in a glass baking dish on top of baking paper. Drizzle fish with some melted nuttelex or extra virgin olive oil, sprinkle with some parsley/oregano (herb of choice). Place in oven for approx. 40 mins or until cooked.


Meanwhile, cook brown rice either in rice cooker or pot.


Steam some brocollini either in microwave or in steamer.


Cut up some spring onions.


When done, plate up the fish and steamed brocollini, and stir in the spring onions and crunchy Asian noodles into the brown rice. I love anchovies and usually stir in some cut up anchovies into the brown rice. Add a squeeze of lemon. Enjoy!
