Avo & eggs on toast with mushrooms, spinach and asparagus


- Slice multi grain toast

- 4 sprigs asparagus

- Handful spinach mushrooms

- Avocado (to spread on toast)

- 1 egg

- Extra virgin olive oi


Cook the mushrooms, spinach and sprigs of asparagus in extra virgin olive oil (or non stick pan)

Meanwhile toast bread & spread avocado on toast

Transfer mushrooms, spinach, asparagus onto plate once cooked

Fry the egg in the pan and once cooked place on top of the toast!
